Huevos Rancheros Adventuras!

Impromptu breakfast food blog post!

I decided to make huevos rancheros because I always hear about it but never tried it.

It has all these delectable aspects that I’m all about. Corn tortillas, eggs, refried beans and so on. It’s no secret that anything Mexican or Mexican-inspired is high on my list. They just make amazing food there and I’m happy they’ve shared that part of their culture with us.

Look at that yolk. It mingles so intensely with the salsa and hot sauce, lending a delicate creaminess to the spice and sharp acidity.

Of course, you could go for over-medium or over-hard if runny yolks aren’t for you.

It’s amazingly simple, actually. And simply delicious. Take some corn tortillas and warm them in a pan on medium until they become pliable. It’s okay if a little char gets on there.

Have your refried beans going in a small sauce pan. I took the easy way and got canned but you can make your own very easily, and vegetarian options are always available.

Same with the salsa. You can make your own but there’s no shame in buying your favorite jar of salsa for this!

Finally, add some butter and olive oil your your frying pan and cook your eggs to your liking. I went with sunny side up and put the lid over the pan to make sure the whites were cooked through.

Construction is easy. Spread your beans on the tortillas, place your egg on top, spoon a decent amount of salsa around the yolk and top it with cheese! This breakfast took me about 15 minutes to throw together.

Garnish with fresh parsley or cilantro, maybe some green onions. Feel free to add in some guacamole or fresh slices of avocado with a squeeze of lime juice!

Recipe:

Ingredients:
– Eggs
– Corn tortillas
– Refried beans
– Salsa
– Cheese (I used a shredded blend but feta or queso fresco would be a superior option here.)
– 2 tbsp. olive oil
– 1 tbsp. butter
– Salt
– Optional: Hot sauce, avocado, guacamole

Note: I didn’t put many increments in the ingredients list because it depends on how many you want to make. I found 2 per adult was a good number.

Instructions:
1. In a small sauce pan on medium-low, warm your refried beans with a tablespoon of olive oil. (or prepare your own if you’re going homemade.)
2. Heat a frying pan to medium and warm your corn tortillas, 8-10 seconds per side.
3. Reduce the heat to medium-low and add the olive oil and butter.
4. Add your eggs, salt the tops and cover for 3-5 minutes.
5. While your eggs cook, spread a few tablespoons of beans on the tortillas.
6. Place the eggs on top of the beans.
7. Dress it up with a little cheese, salsa and any other condiments you wish.
8. Enjoy!
